Oven Sweet Potato Fries

Ingredients

  • 3 sweet potato, peeled and cut into ‘fries’
  • 1 tablespoon olive oil
  • kosher salt, to taste
  • pepper, to taste

Directions

  • Preheat oven to 450.
  • Place on a rimmed baking sheet and toss with olive oil.
  • Bake for 20 minutes, flip and bake for another 20 minutes. Edges should char. Adjust time based on the thickness of your pieces.

Grilled Steak with Blue Cheese Compound Butter

SERVINGS : 4 PEOPLE COOK TIME : MINUTES PREP TIME : MINUTES

Ingredients

  • 1 1/2 pounds T-bone or ribeye steaks
  • seasoned salt, to taste
  • pepper, to taste
  • 1/4 cup butter, softened
  • 2 tablespoons crumbled blue cheese
  • 1 tablespoon fresh parsley, minced
  • 1/8 teaspoon garlic salt
  • 1 pinch pepper

Directions

  • Preheat grill (or use a grill pan on the stovetop).
  • Season steaks with seasoned salt and pepper.
  • Combine remaining ingredients and spoon into a small ramekin. Transfer butter to the refrigerator (or freezer) and let set while you cook the steak.
  • Grill steaks to your desired temperature.
  • Plate steaks and top with portions of compound butter.

Green Beans

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

Ingredients

  • 1 pound green beans, trimmed
  • 2 tablespoons butter, optional
  • kosher salt and pepper

Directions

  • Place green beans in a pan, cover with water, bring to a boil, reduce to a simmer, and let cook about 3 minutes or until bright green and crisp tender.
  • Drain water, add butter, toss to melt, and season with salt and pepper.
