Shaking Beef Bowl

SERVINGS : 4 PEOPLE COOK TIME : MINUTES PREP TIME : MINUTES

Ingredients

  • 1 pound boneless beef sirloin
  • 2 tablespoons olive oil
  • 1/2 cup grape tomato, halved
  • 2 cups baby mixed greens
  • 2 carrot, julienned
  • 8 radish, thinly sliced
  • 1/2 cup cilantro, torn
  • 10 oz rice noodles, Chinese egg noodles, or ramen noodles (seasoning pack discarded)
  • Marinade
  • 5 cloves garlic, pressed or minced
  • 1 tablespoon honey
  • 1 tablespoon oyster sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon low sodium soy sauce
  • 1 teaspoon sesame oil
  • Dressing
  • 1/4 cup water, warm
  • 2 tablespoons honey
  • 2 tablespoons low sodium soy sauce
  • 1 tablespoon rice wine vinegar
  • 1-2 teaspoon chile garlic sauce
  • 1/8 teaspoon sesame oil

Directions

  • Trim fat from sirloin and cut into 1” cubes.
  • Combine beef and marinade ingredients in a resealable bag and let marinate for about 30 minutes.
  • Bring a large pot of water to a boil. Cook noodles according to package directions. Drain and reserve.
  • Combine dressing ingredients in a small bowl and set aside.
  • Heat olive oil in a large skillet (I used my cast iron) over high heat.
  • When it begins to shimmer (and slightly smoke) add beef. Do not overcrowd the pan. You may have to cook in two batches. Let the meat sear, untouched, for a couple of minutes. Flip and cook for a minute of two more. Repeat with remaining meat.
  • Plate noodle, greens, cilantro, and vegetables.
  • Top with beef.
  • Drizzle with dressing.

NOTES

KID NOTE:  A little plate rearranging; a serving of beef, a serving of noodles, carrots, and tomatoes. No dressing and definitely nothing touching each other!

VEGETARIAN TIP: Replace the meat with cubed firm tofu.

GLUTEN FREE MODIFICATIONS: Use rice noodles. Substitute tamari for soy sauce and the oyster sauce.
