After all these years of cooking dinner night after night, it’s meals like this that keep me going! Not that I don’t enjoy cooking – I do. I actually love it. But, let’s be real. After a long day, a long week, or just a long 30 minutes with a tired kid at 5 o’clock; finding the motivation to pull out the pans and open the refrigerator can be hard. Tonight was one of those nights for me. But, when we sat down to eat, it was so worth it. This may just be the best meal I’ve eaten in weeks. See what you think!
