Sweet and Spicy Tilapia over Couscous with Green Beans

Hands down the fastest meal of the week. And, it sure didn’t taste like it. The flavors in the tilapia were tangy and sweet. I chose to leave the ‘spice’ out for the kids’ sake and added it at the table. Paired with simple couscous and green beans, it was a great meal. And an easy clean up too.

Pan Grilled Pork Chops with Sautéed Spinach and Mac and Cheese

This recipe is really versatile and works great with many cuts of meat. I chose pork chops, but flank steak, chicken thighs, or sliced medallions of pork tenderloins would be wonderful. But, the winner of this meal (according to the kids and my husband) was the macaroni and cheese.

Mushroom-Sage Chicken and Rice with Lemony Asparagus

My family loves this meal. And I love how simple it is to make and that lunch the next day is even better than dinner! YUM! The chicken thighs bake really well and turn out nice and tender. You can use breasts; just make sure you don’t overcook them. And, if you’re really into mushrooms, consider adding another cup or two of porcini or oyster.

Pan Seared Pork Chops with Green Beans and Mushrooms and Mashed New Potatoes

This gorgeous meal is a breeze to pull together and super fast! And there’s very little to clean up since the chops and the veggies use the same pan and the easy potatoes cook in the microwave.

Thai Peanut Pork Tenderloin with Snow Peas and Sticky Rice

I’m addicted to Asian recipes! So many bold flavors; tangy, spicy, and my favorite, ‘peanutty’.  Enjoy this one. It’s a winner for sure. To make short work of this meal, be sure to get your rice started and your oven preheated.

Chicken Fricassee with Noodles

Even though the weather is not yet cooperating, at least here in Texas, I’m staring to crave fall comfort food. This Chicken Fricassee is a nice compromise. It has all the makings of a cozy dish but not overly heavy and hot.

Pork Tenderloin and Pan Sauce with Roasted Cauliflower and Broccoli

The beauty of this meal is that it all cooks at once! Get the pork seared and veggies chopped, then it all goes in the oven. The pork will be cooked before the veggies and that gives you just the right amount of time to turn those rich pan juices into a simple sauce. And this sauce is rich; which our family loved.
